Good Eating Monday: Slow Cooker Taco Chili!

This weeks Good Eating recipe is super yummy and easy to make:
 Slow Cooker Taco Chili!πŸ‘
Just pre-cook the meat, slice the veggies, open cans and throw it all  into the slow-cooker and enjoy all the favors of a Taco in a bowl of chili!
The recipe calls for a small 8oz can of tomato sauce, but I forgot to buy it, so I substituted 1/2 cup catsup mixed with 1/2 cup water and it gave this chili a delicious sweet-spicy that I like better!
I've made this Taco Chili twice now and it's a fan favorite on Sunday nights!
I served it mine with cornbread.

If you have a few sprigs of Cilantro, that's worth adding, too!
You can choose your heat level by your choice of Taco Seasoning packets and by adding a jalapeno or not. (I didn't use the jalapeno because Hubby doesn't like too spicy!)
The sweet potato adds fiber and nutrition, but you can skip it if you're not a fan.

Slow Cooker Taco Chili
Ingredients:
2 Tablespoons Olive oil
1 lbs ground turkey or chicken (or beef)
2 packets of low sodium Taco Seasoning, divided in half
1 28oz can diced tomatoes
1  8oz can tomato sauce (or substitute 1/2 cup catsup mixed with 1/2 cup water for sweet-spicy chili)
2 cups low sodium broth or bouillion
1/2 cup diced onion
1 cup frozen bell pepper strips or 1 fresh green bell, sliced
1 package plain frozen corn or 1 can Mexican corn
1 14oz can black beans
1 medium sweet potato, peeled and diced into small pieces
1 Tablespoon Cumin
1 to 2 teaspoons Chili Powder
1 to 2 teaspoons Tumeric
1/2 teaspoon salt

Optional:
1 small jalapeno, minced (if you want extra spicyπŸ˜…)
2 or 3 minced stems of Cilantro added last 15 minutes of cooking time.

Directions:
Prep you slow cooker by spraying inside with oil cooking spray or use a liner and turn on to get it warmed up.

Add olive oil to a skillet and brown the meat and onion together along with 1 packet of taco seasoning until meat is cooked and onion is tender.

In slow cooker: add browned meat & onions, diced tomatoes, tomato sauce, beans, corn, diced sweet potato, bell pepper, broth, rest of taco seasoning and other seasonings, then stir together to combine. Top with lid and set on High for 4 hours or on Low for 7 hours.

For a smaller quantity of Taco Chili:
Use just 1 lb ground meat, one taco seasoning packet, halved and just 1 cup broth, but leave the rest the same.
This is how I've been making mine and it works out fine.
